Ingredients
- 2 cauliflower heads broken into florets
- 3 tablespoons olive oil
- 2 cloves of minced garlic
- Salt and pepper to taste
- Sprinkle of chopped shallots to top.
Method
- Steam cauliflower until tender – a fork should easily pierce it.
- Blend cauliflower in food processor or high powered blender till completely smooth.
- Add remaining ingredients until desired flavour and texture is achieved.
