Ingredients
• 1kg pork tenderloin – cut into strips
• 1 Tbp dry sherry
• 2 tsps cornstarch
• 1 tsp cumin
• 2 cloves garlic – minced
• Salt and pepper to taste
• 1 Tbsp canola oil
• 1 green pepper – seeded and cut into strips
• 1 medium onion – thinly sliced
• 12 cherry tomatoes – cut into halves
Method
- Combine sherry, cornstarch, cumin, garlic, salt and pepper in a container with a lid.
- Add pork and shake to coat.
- Heat oil in pan over mediumhigh heat. Add pork mixture and stir-fry for a few minutes.
- Add remaining ingredients and steam covered for 4-5 minutes.
