- 2 medium carrots
- 4 small cucumbers halved
- 1 tspn finely chopped fresh parsley
- 1 tspn finely chopped fresh Dill
- 1 tablespoon of sour cream
- 1 tspn of minced garlic
- Salt and Pepper to taste
- Scoop out the cucumber seeds and set aside
- Julienne the carrots and place in a bowl.
- Add the parsley, dill, sour cream, garlic and salt and pepper to the carrots and mix together.
- Spoon the carrot mixture into the centre of each cucumber.
- Refrigerate until serving
