Ingredients

  • 2 medium carrots
  • 4 small cucumbers halved
  • 1 tspn finely chopped fresh parsley
  • 1 tspn finely chopped fresh Dill
  • 1 tablespoon of sour cream
  • 1 tspn of minced garlic
  • Salt and Pepper to taste

 

Method

  1. Scoop out the cucumber seeds and set aside
  2. Julienne the carrots and place in a bowl.
  3. Add the parsley, dill, sour cream, garlic and salt and pepper to the carrots and mix together.
  4. Spoon the carrot mixture into the centre of each cucumber.
  5. Refrigerate until serving
