• 4 eggs
• ½ tsp curry powder
• 2 Tbsps butter
• ½ tsp finely chopped garlic
• ½ tsp finely chopped parsley
- Sauté garlic in butter until soft, approximately 8 mins.
- Add curry powder. Stir well. Beat eggs lightly.
- Stir into garlic mixture and cook over low heat, stirring occasionally until eggs are set.
- Sprinkle parsley into egg mixture just before taking from pan.
- Can be served in lettuce cups.
