Melon Balls with Basil Mint Dressing

Ingredients

  • 200g watermelon
  • 200g honeydew
  • 200g rockmelon
  • 10 fresh mint leaves
  • 2 Tbsp fresh chopped mint
  • 2 Tbsp fresh chopped basil leaves
  • 2 Tbsp lemon juice
  • 1 Tbsp runny honey

 

Method

  1. Scoop the melons using a melon baller
  2. In a blender or food processer combine chopped mint, basil, lemon juice and honey, puree until smooth
  3. Skewer melon balls and mint leaves and arrange on a platter
  4. Drizzle with dressing and serve
