Prawn Soup

Ingredients

• 1kg prawns – peeled
• 6 cups low carbohydrate chicken stock
• 2 Tbsps olive oil
• 3 cloves garlic
• 5 celery stalks
• 2 green peppers – diced
• 6 Tbsps mayonnaise
• ½ tsp paprika
• ½ tsp oregano
• ½ tsp thyme
• Salt and pepper to taste
• ¼ cup fresh minced parsley

 

Method

  1. Heat oil in pan. Add celery, garlic and pepper and sauté until softened.
  2. Add mayonnaise and spices and sauté approximately 1½ minutes.
  3. Add chicken stock. Cover and cook on medium heat about 35 minutes or until thickened.
  4. Add prawns and simmer five minutes.
  5. Season with salt and pepper.
