- 1 red or yellow capsicum
- 1/2 onion finely chopped
- 2 small tomatoes, seeded and diced
- 4 medium mushrooms finely chopped
- Freshly grounded pepper
- Tbsp chopped parsley
- Cut lid off capsicum and remove the seeds.
- Mix all other ingredients together.
- Stuff capsicum with mixture and replace lid.
- Place on an ovenproof dish brushed with olive oil. Bake in a 200ºC oven for 45 minutes
