Tomato and Mushroom Salad
Tangy nutritious lunch sure to delight.

INGREDIENTS & METHOD

Ingredients

• 4 small fresh tomatoes
• 10 button mushrooms
• Small bowl washed lettuce
• 2 Tbsps lemon/lime juice
• 2 Tbsps virgin olive oil
• ½ cup fresh basil
• ½ tsp salt
• ½ tsp cracked black pepper

 

Method

  1. Place lettuce in serving bowl.
  2. Cut tomatoes and mushrooms into bite sized pieces and toss through with lettuce.

Dressing

  1. Mix together oil, lemon juice, salt, pepper and finely chopped basil.
  2. Pour over salad just before serving.
